This E-Paper display can easily be controlled with e.g. an ESP32 microcontroller.

You can use the following Library for this display: Adafruit_EPD

The example code ThinkInk_tricolor has an example for a 2.9" screen with SSD1680 chip, you can use this for this display. You can just use the standard SPI pins for this.
